Es tracta d\u2019una creaci\u00f3 feta amb oli amb sabor a gambes, caiena i all, afegint-hi una l\u00e0mina de gambes i un allioli gratinat en directe.<\/p>\n<p>Finalment, el xef del Caravista Restarant ha preparat una miniorelleta de xocolata, oli i sal. Amb una massa d\u2019oli de cacau, la pe\u00e7a s\u2019ha presentat en format ganache amb cobertura de xocolata i peta zetes d\u2019or cruixent. En aquesta elaboraci\u00f3 Mateu ha volgut homenatjar l\u2019oli d\u2019oliva, conegut tamb\u00e9 com l\u2019\u201cor l\u00edquid\u201d, decorant l\u2019orelleta amb una fina capa d\u2019esprai daurat.<\/p>\n<p>Han acompanyat Mateu Blanc en la presentaci\u00f3 de les orelletes de disseny Roger Villar\u00f3, xef col\u00b7laborador, aix\u00ed com Jes\u00fas Gimena i Llu\u00eds Bonillo, representants de l\u2019Aula Gastron\u00f2mica.<\/p>\n<p>El cuiner lleidat\u00e0 ha fet la demostraci\u00f3 el diumenge, dia 19 de gener, a l\u2019Espai Cuina de l\u2019Oli del recinte firal.
